Blueberry Balls
1 x Medium Ripe Banana
½ x Cup Blueberries
1 x Large Egg
1½ x Cups Rolled Oats
1 x Teaspoon Cinnamon
Preheat oven to 180°
In a mixing bowl, mash the banana with a fork then add the egg and continue to mash.
Add the rolled oats and cinnamon to the bowl and mix well until all the ingredients are combined. If the mixture seems a bit dry add a little water until you achieve a dough-like consistency.
Add the blueberries and mix into the oat mixture, bursting them with a fork.
Take small portions of the mixture and roll them into balls and place onto a lined baking tray.
Bake for about 15 minutes or until they turn golden brown and crispy. The baking time may vary depending on the thickness of the balls, so keep an eye on them to avoid overcooking
Once cooked, remove them from the oven and let them cool completely on a wire rack. They will become crunchier as they cool.
