Yummy Carrot Cake

2 x Cups of Oat Flour
1 x Large Carrot (Grated)
½ x Cup Unsweetened Apple Sauce
1 x Egg
2 x Tbs Melted Coconut Oil
1 x Tbs Honey
1 x Tsp Baking Powder
1 x Tsp Cinnamon Powder
1 x Cup Plain Greek Yogurt

Preheat oven to 180°.
In a bowl mix together egg, apple sauce, honey, coconut oil, and half of the yogurt, stir until combined.
Add flour, grated carrot and baking and cinnamon powder. Once thoroughly combined pour into a greased baking pan and bake for 20–25 minutes.
Cool on a rack then cut into desired shapes with a cutter, layer and top with the Greek yogurt.
